Do you ever have nights when you go out and and DON’T feel like perusing a wine list and overthinking what wine to pick? If so, head to Rubis wine bar, a small neighborhood spot with a nice, reasonably priced wine selection and vivacious atmosphere in the middle of St. Gilles in Brussels.

We sat outside there last night, and there was no wine menu in sight—just a very nice server who asked what type of wine you wanted and would magically appear with that style. No stress, just drinking 😊

It got up to 90 degrees yesterday (30+ degrees Celsius) so some light and bright white was in order. We sampled this acidic and easy Valençay Sauvignon Blanc blend with simply refreshing citrus notes and mineralogy and this crisp, quaffable Aligoté. We also devoured a cheese plate starring Stilton, Brie, Morbier, Comté and Saint-Maure de Touraine.
